BRANDY or KAHLUA CHERRY CHOCOLATES
- Maraschino cherries
- Brandy or Kahlua
Pour juice off maraschino cherries and replace with brandy or Kahlua. Allow to stand for several weeks before using.
Fondant
- Drivert (dry fondant)
- Brandy or Kahlua
Mix dry fondant with a small amount of brandy or Kahlua to make a thick paste.
(Our fondant requires 3 1/4 pounds of Drivert. Will make 352 chocolate covered cherries.)
Chocolates
Brush two layers of melted chocolate into cherry chocolate molds. Allow to solidify in refrigerator between coats. Drop flavored cherry into mold and add fondant. Place bottom on chocolate using a teaspoon to ladle melted chocolate. Refrigerate until solid.
