ELLEN’S PUMPKIN BREAD

(From the Kitchen of Ellen Reisetter Rice)

  • 3 1/3 cups flour
  • 2 t. baking soda
  • 1 1/2 t. salt
  • 1 t. cinnamon
  • 1 t. nutmeg
  • 3 cups sugar
  • 1 cup oil
  • 2/3 cup water
  • 2 cups pumpkin – (1 small can)

Sift all dry ingredients including sugar into a large bowl and mix. Make a well in the center and add the remaining ingredients. Mix until smooth. Bake in 3 regular greased and floured bread pans at 3500 for I hour or use 4 small loaf pans and bake for approximately 45 minutes. Cool. Turn on racks to finish cooling.
